HAZEL MOUNTAIN CHOCOLATE

Hazel Mountain Chocolate is Ireland’s only bean to bar chocolate maker, located in the remote reaches of the Burren, County Clare.  

A family affair, Hazel Mountain is focused on small batch, bean-to-bar chocolates from local, sustainable cooperative cacao farms in Madagascar, Venezuela, Mexico, Costa Rica, and Cuba.

They explain the bean to bar process as having “control over each stage of the chocolate making process.” Once they receive the beans from their select farmers, they roast them themselves in their factory in the Burren, and then hand-crack and winnow, before grinding them in stone mills for two days while slowly adding the sugar and local, seasonal flavours. Then, the chocolate is aged for three weeks to ensure the best quality and flavour for you.
